SUNDAY'S RECIPE (a day late)

HAMBURGER PIE, FUNK STYLE

1 lb. ground beef *** 1 cup chopped onion *** 2 med. carrots, peeled & diced *** 1 tsp. minced garlic *** 1 envelope enchilada seasoning *** 8 oz. tomato sauce *** 2 cups mashed potatoes *** 4 slices American Cheese

In large skillet, brown ground beef, onion, carrots, and garlic till meat is done (We like al dente carrots). Stir in enchilada seasoning and tomato sauce. Pour into 2 quart cassarole dish and spread mashed potatoes on top. Bake in 350 degree oven 20 minutes, remove and place cheese slices on top, return to oven another 5-10 minutes. Can substitute taco seasoning and green beans into dish...works just as well. An everyday quick supper dish!
