SUNDAY'S RECIPE(S)

Here's a couple easy recipes...maybe you have them already in your recipe box!

EASY CHICKEN PARMESAN

3 whole boneless chicken breast, cut in half and pounded to 1/2" thick *** 1 pkg dry zesty spaghetti sauce mix *** 1/2 cup Parmesan cheese *** sliced Swiss cheese

Mix the dry spaghetti seasoning mix and Parmesan cheese, place into piepan. Roll and press breading mixture into chicken. Spray large rimmed baking pan and place breasts onto...bake at 350 degrees for 30 minutes. Turn oven off, open door, and put slice of Swiss onto each breast. Close door and dish up rest of meal, then get a breast out of the oven. Its such a simple recipe, but the flavor is great...light but yet delicious.

GRILLED ASPARAGUS

1 bunch asparagus *** olive oil *** salt *** other favorite spices

Wash asparagus and cut off tough bottoms. Dry lightly on paper towel, then sprinkle with olive oil and salt. At this point you could try addt'l spices...rosemary, lemon pepper, cayenne, curry powder or others. Grill on medium to hot grill for about 5 minutes...turning frequently, till you just get to see dark spots on the shoots and they are starting to be tender. You want them to be cooked only al dente.. but they will be tremendous!
