SUNDAY'S RECIPE:

HONAKER STYLE CLAM FRITTERS

1 cup flour 1 tsp. baking soda 2 tsp baking powder
2 eggs 1 TBSP lemon juice 1/3 cup clam juice
1/4 cup milk 1 TBSP melted butter pinch cayenne pepper
2 TBSP fresh chop parsley 3-11oz cans minced clams salt & pepper

Stir together flour, b. soda & b. powder, whisk in eggs, lemon juice, clam juice, milk,
butter & cayenne till batter is smooth. Add parsley, clams & season with salt & pepper
(1/2-1 tsp salt?) and mix well. Heat 1/4" oil in big skillet and spoon 2 TBSP portions clam batter into oil. Fry until golden brown on bottom side then turn and fry approx 2 minutes more. Drain on paper towel and season to taste, eat plain or with your favorite dipping sauce.
